At Fazenda Pantano, Wagner Ferrerro grows an impressive 148 coffee varieties across 550 hectares in the Cerrado Mineiro region. By employing cutting-edge technology and sustainable practices, Ferrero has established a reputation for producing exceptional specialty coffees. Recently, his dedication was recognised with a national award for sustainability in the perennial cultivars category.
This lot is a Yellow Catuaí variety, grown in a uniquely favourable area of the farm where the balanced sunlight enhances the coffee’s quality year after year. This coffee has been washed and left in a fermentation box for 24 hours, and then spread on raised beds in thin layers and turned once a day, for 8 days. For further drying, the coffee is placed in higher layers and turned more frequently until the ideal moisture level is reached. This process can take up to 20 days in total.
