This is a single variety, Cuturra, lot from one of Cofinet's family farms, and an excellent lot for consistent volume available year round.
Produced by Luz Helena Salazar, the mother of Carlos & Felipe the founders of Cofinet. This coffee is harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects. Luz Helena is excellent at managing her farm operation and is proud of the results she achieves with her meticulous washed lots.
Cherries were exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature-controlled conditions until ideal moisture content was achieved.
