Returning for its third year at Thomson’s Coffee, we’re thrilled to welcome back this Red Honey processed lot from Aquiares Estate. Each harvest of Diego Robelo’s coffees brings sweetness, vibrancy, and character, and this year is no different.
The Centroamericano variety is a hybrid of the Sarchimor T-5296 and a wild Rume Sudan variety. As such, it has intricate nutritional needs, and thrives with the growing conditions available at Aquiares Estate. Centroamericano is high yielding, rust resistant, and has a complex, elegant profile.
During the honey process, the coffee pulp (cherry skin) is removed, but the mucilage is kept in-tact on the coffee bean, leading to further sugar absorption in the coffee beans throughout the drying stage - ‘red’ refers to the colour of the mucilage as it dries. The coffee is then hulled, removing the mucilage and parchment.
Diego has launched a fresh approach to specialty coffee after taking over Aquiares Estate from his father, Alfonso. The estate is a known trailblazer among specialty coffee producers in Costa Rica and throughout Central America, and Diego has explored many new potentials for the farm through excellent agricultural management, new coffee varieties, and further experimental processes.
Orders placed before 8am on working days are typically dispatched the same day. Please note that we do not process orders over the weekend.
We currently only deliver within the UK and do not ship to Ireland or internationally. Orders under £25 incur a standard UK delivery fee of £3.50.
We ship orders using either Royal Mail 24 or DPD. Both services aim to deliver the next working day where possible, but please be aware that this is an aim and not a guarantee.
