The farm at El Tambor represents a gem of the speciality coffee industry, invested in by its owner Victor Calderon in 2001, who sold his house and car to buy it, in order to gain footing in the growing market for small-scale, quality-focused lots. This initial dedication continues to be evident in the farm's innovations in eradicating leaf-rust, a fungus which wreaks havoc across entire crops, using environmentally sound, sustainable methods. We carefully develop this roast's smooth, milk chocolate body, without losing the complexity of its sweetness or acidity.
