After purchasing a property from his uncle in 2013 with his savings, producer Alex Ponce quit his factory job and began to plant coffee on his newly acquired land. Fast forward to 2024, and Alex has expanded his production and coffee drying space.
At Bella Vista, ripe cherries are de-pulped at the wet mill on the same day as picking, and are then dried on the raised beds until ideal moisture and humidity levels are reached. The beans are then raked and turned every 30 minutes throughout the drying phase, and finally hand-sorted to remove any defects.
