Historically, coffee traveling from India to the west underwent significant changes during shipping, arriving in Europe a characteristic pale amber colour. Compared to other coffees, Monsoon Malabar exhibits very low acidity and a smooth, almost spicy profile.
Today the conditions of those old shipping vessels are recreated on land. From June to September, Monsoon season brings high rainfall to the Malabar coast. The harvested and processed coffee cherries are spread out evenly in vast, ventilated warehouses, raked daily. When they have adopted their signature golden colour they are prepared for shipping. We roast ours dark to enhance this coffee's traditional flavours.
