Finca El Aguila, a farm in the Santa Ana region of El Salvador, is meticulously managed with a dedication not just to quality but also to biodiversity and sustainability. Shade trees are planted throughout the farm, and manual weed-control is performed continuously, ensuring that the mild, high-altitude climate and rich rainfall enable the ripe coffee cherries to showcase an incredible depth and complexity of flavour. This coffee is some of the first natural-processed coffee to come from El Aguila, showing that the family-owned farm is not only highly quality-focused but forward-thinking and experimental. Their sound intuitions are evident in the finished brew - a rich, silky coffee bursting with sweetness and clarity of flavour.
