Brazil | Pe de Cedro

The Pe de Cedro farm, in the highlands of Mantequeira de Minas, stands out among many others for its highly involved and rigorous quality control measures. The owner, Edson Morais de Barros, works closely with agricultural advisors, as well as coffee-production specialists. The coffee cherries are harvested and processed manually to high environmentally-friendly standards, and the care and attention across all stages of production is immediately evident in the finished cup. This coffee has a rich, ripe sweetness and a complex, balanced acidity.
